Why do Hindi adjectives change their ending?

Most adjectives agree with the noun. A tired man is thaka and a tired woman is thaki. Adjectives that do not end in -aa, like khush, often stay the same.

How do I say "I'm happy" in Hindi?

Say main khush hoon. You can also say mujhe khushi ho rahi hai, which is closer to "I am feeling happy".

Is "achha" only an adjective?

No. Achha means "good", but people also say it on its own to mean "I see" or "okay", the way English speakers say "right" while listening.
